Paiges Cheddar Cheese Soup

Ingredients

  • 1 small Onion, chopped
  • 1/4 of a Green Pepper, chopped
  • 3 T Butter
  • 3 T Flour
  • 1 1/2 C Chicken Stock
  • 1 1/2 C Half and Half
  • 1 C Sharp Cheddar Cheese, grated
  • Salt and Pepper, to taste
  • Dash of Cayenne Pepper (optional)

Preparation

Step 1

ln a saucepan, saute onion and green pepper in butter for 5 minutes.

Blend in flour. Add stock and half and half.

Cook until thick. Add cheese and stir until melted. Add salt and pepper to taste, and cayenne if desired.

Serves 3 to 4
