chicken ham and cheese rollups

Ingredients

  • 1 skinless, boneless chicken breast
  • 2 thin slices lean cooked ham
  • 2 thin slices swiss-style cheese
  • grated nutmeg, salt and pepper
  • 2 tablespoons white wine
  • 1 tablespoon grated paremsan cheese
  • 2 tablespoons italian breadcrumbs

Preparation

Step 1

slice chicken breast in half. dice or slice the ham and cheese;divide equally on topof the 2 chicken pieces. sprinkle with nutmeg, salt and pepper to taste. roll up each chicken cutlet with the filling inside. dip each roll first in a little wine or lemon juice, then in parmesan and finally in breadcrumbs. arrange each roll seam-side down on a baking tray that has been sprayed with cooking spray.

bake, uncovered, in a preheated 425 oven for 20-25 minutes, until cheese begins to melt.
