Cauliflower Cheese Soup

This is a good solid meal in and of itself. Just serve it with a crusty loaf of bread and you'll be warm inside and out.

Ingredients
- 1 medium head cauliflower, broken into florets
- 1 medium onion, chopped
- 1 can chicken broth (14 1/2 oz)
- 1 chicken bouillon cube
- 2 tablespoons butter
- 2 tablespoons flour
- 3 cups milk
- 2 cups shredded cheddar cheese
- 1 tablespoon dried parsley
- 1 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/8 teaspon each cayenne pepper, curry powder and
- white pepper
Preparation
Step 1
1. In a large kettle, combine the cauliflower, onion,
broth and bouillon
2. Cover and cook ove rmedium heat until tender
3. In a medium pan, melt butter; stir in flour until
smooth
4. Gradually add milk.
5. Cook and stir until bubbly
6. Cook and stir 2-3 minutes longer or until thickened
7. Reduce heat; add cheese and seasonings
8. Pour into cauliflower mixture
9. Simmer slowly for 30 minutes
DO NOT BOIL!
