Basic Cheese Soup

Ingredients
- 1 1/2 cup chopped vegetables
- 1/4 cup butter
- 1/4 cup flour
- 1 cup milk
- 2 cups chicken broth
- 1 teaspoon paprika
- 1 teaspoon dry mustard
- 2 teaspoons Worchestershire sauce
- 2 cupc shredded cheese
- Cheddar Cheese; celery, onion and carrots
- California Cheese; chopped green onion, chopped and
- seeded tomato, canned, chopped
- green chilies; usse Monterey Jack
- cheese
Preparation
Step 1
1. In heavy pan, cook vegetables in butter over med- high heat for 10-12 minutes or until tender
2. Stir often
3. Whisk in flour, paprika and mustard
4. Cook and stir 1 minute; whisk in broth milk and
Worchestershire sauce
5. Cook 12-14 minutes or until thick and bubbly; whisk
constantly
6. Reduce heat to med-low; whisk in cheese until melted
7. Cover; simmer 10 minutes; stirring occasionally
