Master Cream Soup Mix

Instead of opening a can of condensed cream soup for the next casserole, add your own soup mix. A can of commercial cream of mushroom soup has 331 calories and 2,369 mg. of sodium. The mix has 101 calories and 719 mg. of sodium

Ingredients

- 2 cups instant nonfat dry milk
- 1 cup cornstarch
- 1/4 cup instant beef bouillon
- 2 tablespoons dried onion
- 1/2 teaspoon thyme, crushed
- 1/2 teaspoon dried basil, crushed
- 1/2 teaspoon pepper

- 2 cups dry milk
- 3/4 cup cornstarch
- 1/4 cup instant chicken bouillon
- 2 tablespoons dry onion flakes
- 1/2 teaspoon pepper
- 1 teaspoon basil
- 1 teaspoon thyme
- Cream of celery soup; 1 cup mix + 1/4 cup celery
- Cream of mushroom soup; 1 cup mix + 1 can drained
- mushrooms
- Cream of broccoli soup; 1 cup mix + broccoli

1. Combine all ingredients and mix well
2. Store in airtight container
3. To make one can of soup, combine 1/3 cup dry mix
with 1 1/2 cups water in a small saucepan
4. Cook and stir unti thickened
*To vary the flavor of the mix, replace beef bouillon
with chicken or vegetable bouillon. Use different herbs
and spices such as mace , nutmeg, rosemary, celery
flakes, chives minced garlic or parsley flakes.
For a tasty cream soup, just add cooked vegetables and/
or bits of fish, meat, poultry or grated cheese.

1. Mix together; store in airtight container
2. To make 1 1/2 cups of soup = to 1 can soup, mix 1/3
cup dry mix and 1 1/4 cups water.
