Pumpkin Cranberry Bread

  • 3 cups flour
  • 1 tbsp plus 2 tsp pumpkin pie spice
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 3 cups sugar
  • 1 can (15oz) pumpkin
  • 4 large eggs
  • 1 cup vegetable oil
  • 1/2 cup orange juice or water
  • 1 cup dried cranberries

Step 1

Preheat oven to 350. Grease and flour 2 loaf pans.

Combine flour, pumpkin pie spice, baking soda, and salt in large bowl. Combine sugar, pumpkin, eggs, vegetable oil and orange juice in large mixer bowl; beat until just blended. Add pumpkin mix to flour mixture; stir til just moistened. Fold in cranberries. Spoon batter into prepared loaf pans.

For 9x5 in loaf pan:
bake 60-65 min

For 8x4 in loaf pan:
Bake 55-60 min
