Vanilla Cupcakes with Chocolate Buttercream Frosting

Ingredients

  • CUPCAKES
  • 1 cup Sugar
  • 1/2 cup Butter
  • 2 Eggs
  • 2 tsp Vanilla
  • 1 1/2 cups Flour
  • 1 3/4 tsp Baking soda
  • 1/2 cup Milk
  • BUTTERCREAM
  • 1 stick Butter, softened
  • 3 cups Confectioner's sugar
  • 3-5 tbsp Milk
  • 1 tsp Vanilla
  • 1/2 cup Cocoa powder

Preparation

Step 1

Preheat oven to 350 F. Line a muffin/cupcake pan with wrappers or spray with nonstick spray.

In a large bowl, cream butter and sugar. Beat in eggs and vanilla.

In a seperate bowl, whisk together flour and baking soda. Mix wet and dry ingredients. Stir in milk, blending thoroughly.

Fill muffin cups or wrappers 3/4 full. Bake 20-25 minutes for full sized cupcakes, 15 minutes for small cupcakes. Cool.

BUTTERCREAM

Cream butter and confectioner's sugar. Beat in 3 tbsp milk and additional milk to achieve desired consistency. Beat in vanilla and cocoa powder. Use to frost cooled cupcakes.
