Peach and Mustard Glazed Pork Tenderloin

Ingredients

  • 2 pork tenderloins (about 3/4 lbs. each)
  • Peach Mustard Marinade
  • 1/2 cup peach preserves
  • 2 Tbsp dijon mustard
  • 2 tsp vegetable oil
  • 1/4 tsp dried thyme leaves
  • 1/4 tsp salt

Preparation

Step 1

Mix all Peach Mustard Marinade ingredients together in shallow glass or plastic dish or resealable plastic food storage bag. Add pork; turn to coat with marinade. Cover dish or seal bag and refrigerate, turning pork occasionally, at least 1 hour but no longer than 8 hours.

Heat coals or gas grill for direct heat. Remove pork from marinade; reserve marinate. Cover and grill pork 4 to 5 inches from medium heat 20 to 25 minutes, brushing occasionally with marinade and turning once, until pork is slightly pink in center.

Heat remaining marinade to boiling; boil and stir 1 minute. Cut pork into slices. Serve with marinade.
