Ingredients
- 3 cups all-purpose flour
- 3/4 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/8 tsp. cloves
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 1/2 cup molasses
- 1 tsp. vanilla
- 1/4 cup grated fresh ginger
Preparation
Step 1
Preheat the oven to 375 degrees.
Stir togethr flour, baking soda, cinnamon and cloves; set aside.
In a large mixing bowl, beat butter with an electric mixer for 30 seconds. Add the egg, molasses and vanilla; beat until combined.
Beat in ginger and as much of the flour mixture that you can. Stir in the remaining flour.
Cover, chill the dough at least 3 hours or overnight.
Remove from the refrigerator. On a lightly floured surface, roll dough to about 1/8-inch thickness. Cut the dough with cookie cutters.
Bake for 5 to 6 minutes or until the edges are firm and the bottoms are light brown. Transfer to wire racks; cool.
