Ingredients

  • chocolate ganache:
  • 1/2 cup granulated sugar
  • 2 (13.5 oz.) cans of coconut milk, chilled
  • pinch of salt
  • 1 tsp pure vanilla extract
  • 8 Samoas, chopped in eighths + more to garnish
  • Salted Vanilla Bean Caramel
  • Chocolate Ganache
  • 12 ounces bittersweet chocolate, coarsely chopped
  • small pinch of sea salt + more for garnish
  • 2 cups heavy cream
  • Vanilla Bean Caramel Sauce:
  • Makes 1 1/2 cups
  • 1 cup (225 grams) granulated sugar
  • 1 1/4 cups heavy cream
  • 1 vanilla bean, split and seeds removed*
  • 1/4 teaspoon coarse salt
  • 1 teaspoon pure vanilla extract
  • If you don’t have any vanilla beans on hand; increase the vanilla extract to 1 tablespoon. It still tastes great!

Preparation

Step 1

In a blender, combine the sugar, chilled coconut milk (white will be somewhat solidified), vanilla, and salt. Blend until creamy.
Pour the mixture into your chilled ice cream maker and churn for 15 minutes. Drizzle in 2-4 tablespoons of the chocolate ganache and churn for 5 more minutes. Add in the Samoa chunks, churn for just 1 or 2 more minutes.
Coat the insides of your serving glasses with the caramel and fill with the Samoa blizzard. Top with a few more Samoa chunks, and a good drizzle of caramel.
