Hummus (several types)

A variety of different hummus recipes - classic, cucumber dill, no fat, chocolate, artichoke and garlic.

Ingredients

  • Classic Hummus - 1 clove garlic, 15 oz can drained and rinsed chickpeas, 1/4 tsp salt, 2 T. each lemon juice tahini, olive oil and water.
  • Cucumber Dill Hummus - ingredients for classic hummus minus the water; 1/2 peeled, seeded and chopped cucumber, 1/2 cup fresh dill (or 1 T dried dill).
  • Zero Fat Hummus - ingredients for classic hummus minus thanini and olive oil. Add 3 T. each water and lemon juice, plus 1/4 tsp salt.
  • Chocolate Hummus - ingredients for classic hummus minus garlic and lemon juice. Add 1 T. honey, 4 T. unsweetened cocoa powder, 5 T. sugar, 3 T. water and 1/4 tsp extra salt.
  • Artichoke and Garlic Hummus - add 14 oz can of drained marinated artichoke hearts and 3 additional garlic cloves to original recipe.

Preparation

Step 1

Combine all ingredients in food processor and pulse until smooth, scraping the sides of bowl as necessary. Season to taste with slat, olive oil or paprika (for original recipe only).

Refrigerate for up to 7 days or freeze.
