Greg Ladas Low-Cal Apple Pie

Ingredients

  • For Pie:
  • 18 packets of NuStevia(3/4 cup)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup NuNaturals flour
  • Dash of Morton Lite Salt
  • 6 cups thinly sliced peeled/cored apples(use mixture of apple varieties)
  • For Crust:
  • 1/2 cup NuNaturals Flour
  • 1/2 cup coconut flour
  • 3/4 cup Smart Balance Light
  • 1/2 cup cold water

Preparation

Step 1

For Pie:

Preheat oven to 425F.

Mix in bowl NuStevia, spices,flour and salt. Stir apples into mixture.

Place into bottom crust(within nonstick pie pan). Cover with second crust and cut a few slits in top.

Bake 40-50 minutes.

For Crust:

Mix NuNaturals and coconut flour in bowl. Cut in Smart Balance light until mixture resembles coarse crumbs. Add cold water and mix just until dough comes together. Allow to rest in refrigerator before cutting in half and rolling out a top and a bottom crust in between wax paper. (I usually spray the paper a little too, with cooking oil spray, to make sure the crust does not stick to the paper, but it is not necessary. You can dust the paper with flour if worried about it sticking.)
