Ingredients

  • 1 C all-purpose flour
  • 1/3 C sugar
  • 1/2 C (one stick) unsalted butter
  • 1/4 t salt
  • 1 1/2 t vanilla extract
  • 1/4 C Nutella

Preparation

Step 1

Place butter in a stand mixer and beat until smooth, light and fluffy (about five minutes). Add the sugar and vanilla and beat again until combined. Add the flour bit by bit, until just combined (the dough should be dry and crumbly).

Pre-heat the oven to 350. Roll dough into balls (about 1 inch in diameter) and place onto a cookie sheet lined with parchment paper. Bake for 8-10 minutes, or until the cookies turn a slight brown.

While the cookies are cooling, chop up whole hazelnuts until they’re pretty small. Spread Nutella on the bottom of a cool cookie, then sandwich another on top of it–you want to put on enough Nutella so that it gushes out the sides a little bit. Roll the cookie in the crushed hazelnuts so that they stick to the Nutella, then enjoy!
