Festive Fiesta Layered Dip

Ingredients

  • 1/2 cup tomato, seeded and finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/4 cup white onion, finely chopped
  • 1/4 cup coriander leaves, finely chopped
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 1 large lime
  • 3 ripe avocados, pitted
  • 425 ml sour cream
  • 2 tsp ground cumin
  • 1/2 cup old white cheddar cheese, shredded

Preparation

Step 1

Stir the tomato with the red and green pepper, onion, coriander and 1/4 tsp each salt and pepper until well combined; set aside.

Grate enough zest from the lime to measure 2 tsp; juice the lime to measure 2 tbsp juice. In a separate bowl, mash the avocados until almost completely smooth. Stir in 1/4 cup sour cream, the lime zest, lime juice, cumin and remaining salt and pepper.

Spread remaining sour cream over the bottom of an 8 cup straight-sided glass dish. Top with avocado mixture. Scatter tomato mixture over top. Sprinkle shredded cheese over tomato mixture. Chill for 30 minutes before serving.

Serve with tortilla chips.
