  • 4 Tbsps finely chopped fresh parsley
  • 2 Tbsps finely chopped capers
  • 2 Tbsps finely chopped gherkins (cornichons)
  • 1 Tbsp anchovy paste
  • 2 cloves garlic, minced
  • 1/2 tsp Kosher salt
  • 1/2 tsp black pepper
  • 3-6 vine ripened tomatoes, scooped, then diced
