Ingredients
- 1 1/2 cups mayonnaise
- 2 Tbsps plus 3 tsps lemon juice
- 4 Tbsps finely chopped fresh parsley
- 2 Tbsps finely chopped capers
- 2 Tbsps finely chopped gherkins (cornichons)
- 1 Tbsp anchovy paste
- 2 cloves garlic, minced
- 1/2 tsp Kosher salt
- 1/2 tsp black pepper
- 3-6 vine ripened tomatoes, scooped, then diced

Pat dry all diced-up items with paper towels to soak up excess moisture/liquids. Then, whisk together in a bowl and let set overnight.
