way easy cookies

Ingredients

  • 1 1/2 cups sugar
  • 1/4 cup cocoa
  • 1 stick margarine or butter
  • 1/2 cup low-fat milk
  • pinch of salt
  • 1 cup creamy peanut butter
  • 2 2/3 cups quick-cooking oatmeal

Preparation

Step 1

pour sugar, cocoa, margarine, milk and salt into a large saucepan over high heat. stir occasionally until margarine melts, then stir well, about 10 strokes.

bring the mixture to a boil and let it continue to boil for exactly 3 minutes. stir occasionally. remove pan from heat. add peanut butter and stir until melted and mixed in. stir in oatmeal, combining well.

drop by spoonfuls onto a large sheet of waxed paper. cool for 20 minutes or until set.

makes 36 2-inch cookies.
