snowball cake

Ingredients

  • 1 1/2 tablespoons unflavored gelatin
  • 4 tablespoons cold water
  • 1 cup boiling water
  • 1 cup granulated sugar
  • dash of salt
  • 1 1/2 cups orange juice
  • juice of 1 lemon
  • 1 angel food cake
  • 1 pint heavy cream
  • 1 can shredded coconut

Preparation

Step 1

soften gelatin in 4 tablespoons of cold water. add boiling water and stir. add sugar and salt; stir thoroughly. add orange juice and lemon juice, stir. refrigerate until mixture begins to thicken. whip 1/2 pint heavy cream; fold into this gelatin mixture.

meanwhile, break cake into walnut-sized pieces grease a large bowl; line it with waxed paper. alternate layers of cake and gelatin mixture, beginning and ending with gelatin.

let set in refrigerator overnight. remove from bowl, frost with remaining cream, which has been whipped with a little sugar and vanilla.

sprinkle with shredded coconut and serve.
