Ingredients
- 1/4 cup chopped pecans
- 4 medium apples, peeled, cut into 1 inch pieces
- 1/4 cup raisins
- 1/4 cup firmly packed brown sugar
- 1/4 cup water
- 1 tsp cinnamon
- 2 tsp vanilla
- 4 (5x3x1/4 inch) slices cooked lean ham (8oz)
Preparation
Step 1
Heat 12 inch nonstick skillet over medium high heat until hot. Add pecans; cook, stirring constantly, 3 to 4 minutes or until lightly browned. Immediately remove pecans from skillet; set aside.
In same skillet, combine apples, raisins, brown sugar, water, and cinnamon; stir gently to coat apples. Reduce heat; cover tightly and simmer 6 to 7 minutes or just until apples are crisp tender. Stir in vanilla.
Increase heat to medium high. Move apple mixture to 1 side of skillet. Add ham slices; cook 3 to 5 minutes or until most of liquid evaporates, turning once.
To serve, place ham slices on 4 plates. Spoon apple mixture over ham. Top each with 1 Tbsp pecans.
