Mushroom Saute with Gnnocchi and Parmesan

Ingredients

  • 4 T butter
  • 2 cloves garlic, sliced
  • 4 sprigs fresh thyme
  • 4 oz wild mushrooms, such as porcini, chanterelle or shitake, chopped
  • 1 c low sodium chicken broth
  • salt
  • pepper
  • 1 (9 oz) package store bought gnocchi
  • Parmesan cheese for shaving

Preparation

Step 1

1. Melt butter in a large skillet over medium high heat until brown. Add the garlic, leaves from sprigs of thyme and mushrooms, and cook until the mushrooms are brown and soft, about 10 minutes. Add the chicken broth and simmer until the broth is reduced by half, about 7 minutes. Season with salt and pepper to taste.

2. Meanwhile, prepare the gnocchi according to package directions. Drain and add to the mushrooms. Toss until gnocchi are well coated with the sauce.

3. Shave Parmesan over the gnocchi and serve.
