Mango Salsa

Ingredients

  • 2 Mangos, peeled and chopped chunky
  • 1 Bunch cilantro
  • 1 red pepper, cut into 2" chunks
  • 1 jalapeño
  • 4 scallions, chopped in 2" pieces
  • 1 juice of a lime
  • 1/4 C olive oil
  • 1 Tbs balsamic vinegar
  • 1/4 tsp cumin
  • 1/2 tsp salt

Preparation

Step 1

Take large bunch of cilantro, a handful, rinse and remove stems. Put cilantro in food processor. Add chunks of red pepper, jalapeño,scallions. Chop together. Remove and add to Mango. Add diced chiles, juice of lime, olive oil, vinegar, cumin, and salt. Mix well. Chill. Blot with paper towel to thicken.
Best made a day ahead… Great served w/ chunked avocado over lettuce as salad. Can also add cooked shrimp!
