Chocolate Pudding Cake (Genache)

A delicious, though not particularly pretty, alternative to brownies.

For a gift, mix dry ingredients (cake and sauce separately), and add instruction card.

Ingredients

  • CAKE:
  • 1 c all-purpose flour
  • 1 T baking powder
  • 1/4 c cocoa powder
  • 1/4 tsp salt
  • 1/3 c sugar
  • 1/3 c canola oil
  • 1/2 c 2% milk
  • 1 t vanilla
  • SAUCE:
  • 1/2 c sugar
  • 1/4 c cocoa powder
  • 2 c boiling water

Preparation

Step 1

1. Preheat oven to 400 degrees.

2. In a large bowl, stir together all cake ingredients until just mixed. Pour into an 8-inch cake pan lightly sprayed with oil.

3. In a separate bowl, mix together sugar and cocoa powder for sauce. Sprinkle mixture evenly over top of cake batter and carefully pour the boiling water over the top, but do not mix. Bake in the oven for 25-30 minutes.

4. Scoop out 3-ounce portions and serve with berries and/or ice cream.
