BANANA NUT BREAD

Ingredients

  • 1 1/4 cups flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon soda
  • 1 cup sugar
  • 1/3 cup shortening
  • 2 eggs
  • 1/2 cup chopped nuts
  • 1 cup (2 or 3) bananas, mashed
  • 1 teaspoon vanilla

Preparation

Step 1

Preheat oven to 350 degrees. Cream shortening, sugar, and vanilla. Blend in one egg at a time; mix until smooth and light. Add mashed bananas. Add flour, baking powder, and soda; mix well. Stir in nuts. Pour batter into a greased and floured loaf pan. Bake for 55 minutes or until toothpick inserted in center comes out clean.
