CRANBERRY NUT BREAD

Ingredients

  • 1 cup flour
  • dash of salt
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon soda
  • 1/4 cup shortening
  • 3/4 cup orange juice
  • 1 teaspoon grated orange peel
  • 1 well beaten egg
  • 1 cup fresh cranberries, chopped
  • 1/2 cup chopped nuts

Preparation

Step 1

Preheat oven to 350 degrees. Combine flour, salt, sugar, baking powder, and soda; cut in shortening. Combine juice, peel, and egg; add to dry ingredients, mixing just to moisten. Fold in berries and nuts. Pour into greased and floured loaf pan. Bake for 60 minutes or until toothpick inserted in center comes out clean.

Variation: Substitute dried cranberries for the fresh ones.
