Minestrone soup

Ingredients

  • 1 onion diced
  • 2 Tbsp. olive oil
  • 4 cloves minced garlic
  • 2 robs celery diced
  • 1 carrot peeled diced
  • 1 medium zucchini diced
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 6 cups low sodium chicken broth
  • 1 28 oz diced tomatoes (low sodium)
  • 1 15 oz crushed tomatoes
  • 1 15 oz cannoloni beans drained and rinsed
  • 1/2 cup whole grain pasta

Preparation

Step 1

In large soup pot heat oil...cook and stir onion until translucent, 4 min. add garlic cook 30 seconds. Add celery and carrots. Cook and stir 5 minute. Add zucchini, oregano salt and pepper. Cook and stir for 2 minutes. Add tomatoes bring to boil stirring frequently. Reduce heat to medium low. simmer uncovered for 10 minutes. Add beans and pasta cook 15 minutes more.

Serve with parm cheese.
