Ingredients
- 1 onion diced
- 2 Tbsp. olive oil
- 4 cloves minced garlic
- 2 robs celery diced
- 1 carrot peeled diced
- 1 medium zucchini diced
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1 tsp. salt
- 1/2 tsp. pepper
- 6 cups low sodium chicken broth
- 1 28 oz diced tomatoes (low sodium)
- 1 15 oz crushed tomatoes
- 1 15 oz cannoloni beans drained and rinsed
- 1/2 cup whole grain pasta
Preparation
Step 1
In large soup pot heat oil...cook and stir onion until translucent, 4 min. add garlic cook 30 seconds. Add celery and carrots. Cook and stir 5 minute. Add zucchini, oregano salt and pepper. Cook and stir for 2 minutes. Add tomatoes bring to boil stirring frequently. Reduce heat to medium low. simmer uncovered for 10 minutes. Add beans and pasta cook 15 minutes more.
Serve with parm cheese.
