Ingredients

  • Cuban Sandwich
  • 1 loaf of Cuban bread cut into 4 pieces
  • 12 slices of ham
  • 12 slices of roast pork
  • 12 slices of Swiss cheese
  • dill pickle slices
  • mayo/yellow mustard mix (1 mayo to 2 mustard)
  • Black Beans and Rice
  • 1 lb. dried black beans
  • 1 medium onion, chopped
  • 4 cloves garlic, crushed
  • 2 bell peppers, chopped
  • ham pieces to flavor
  • 1 tsp. black pepper
  • 1/2 tsp. dried oregano
  • 1 1/2 tsp. ground cumin
  • 1 TBSP cider vinegar
  • salt to taste

Step 1

Cuban Sandwiches
Slice each piece of Cuban bread horizontally. Use 3 slices of ham, pork, and cheese for each sandwich. Add pickles as desired. Spread each sandwich with m/m mixture. Using a sandwich press, lightly spray press with pam and press sandwich until warm. Cut diagonally. Serve with black beans and rice.

Black Beans and Rice
Rinse beans. Cover with water in large pan, bring to boil, reduce heat and simmer 3 minutes. Turn off heat, leave covered and soak overnight. Add more water if needed. Boil 2 hrs, adding ham about half way through. Cook onion, garlic and peppers in olive oil until tender. Add onion mixture to beans. Add next 3 ingredients and simmer about another hour till desired consistency. Remove from heat, add vinegar and salt to taste. Serve with rice
