Toasted Coconut Muffins

Ingredients

  • 1 1/2 cups flour
  • 1 cup sweetened shredded coconut
  • 1/2 cup sugar
  • 1/3 cup chopped almonds
  • 1 1/2 teas baking powder
  • 3/4 teas orange peel
  • 1/2 teas baking soda
  • 1/4 teas salt
  • 3/4 cup unsweetened coconut milk
  • 2 large eggs
  • 1/4 cup unsalted butter melted
  • 1 teas vanilla extrace

Preparation

Step 1

Preheat oven to 400. Butter twelve muffin cups. Combine flour, toasted cocnut, sugar, almonds, baking powder, orange peel, baking soda and salt in large bowl. Whisk coconut milk, eggs, butter and vanilla extract in medium bowl to blend. Add egg mixture to flour mix and stir until combined.

Divide batter among prepared muffin cups. Bake until tester inserted into center comes out clean.
