Homemade Summer Sausage

Ingredients

  • 5 pounds lean ground beef
  • 2 teaspoons liquid smoke
  • 2 tablespoons Sugar Cure
  • 2 teaspoons pepper corns
  • 4 tablespoons tender quick
  • 2 teaspoons garlic salt
  • 2 teaspoons mustard seed
  • 2 teaspoons pepper

Preparation

Step 1

1. Mix all ingredients thoroughly.
2. Chill overnight; next day-mix well and chill.
3. 3rd day- mix and chill
4. 4th day-mix again and form into 2 rolls
5. Place on broiler pan and bake for 8 hours at 200
degrees.
6. Turn off oven, let sausage cool in oven.
7. When cool, wrap each roll in waxed paper and
aluminum foil.
Freeze well.
