- 1 cup dry quinoa
- 1/2 cup halved green grapes
- 1/2 cup halved red grapes
- 1/4 cup feta cheese
- 1/2 cup roasted sweet potatoes
- 2 cups kale
- 1/4 cup cashews
- 1 1/2 tbls oil

Directions
Bring 4 cups of water to a simmer in a pot on
the stovetop, and add the quinoa. Simmer for 10
minutes, and then remove the pot from the heat and
cover. After 5 minutes, remove the cover, stir the
quinoa, transfer to a bowl and place in the
refrigerator to cool down. Next, toss the halved red
and green grapes in ½ tablespoon of oil and spread
on a baking tray. Place in a 350F oven for 10-15
minutes, or until they are lightly roasted. Remove the
grapes from the oven and place them into the
refrigerator to cool. Peel the sweet potato and cut
into ¼ inch cubes. Toss the cubed sweet potatoes in
1 tablespoon of oil and roast in a 350F oven for
about 15 minutes, or until the edges start to brown.
Remove the sweet potatoes from the oven and place
in the refrigerator to cool. Once all of the cooked
ingredients are cool, mix the cooked quinoa, roasted
grapes, roasted sweet potatoes, and cashews in a
mixing bowl. Toss the mixture with the white
balsamic vinaigrette to taste, about ¼ cup.
Place the washed kale on 2 places and top with the
quinoa mixture. Garnish with the feta cheese and
enjoy
