White Bean Mushroom Soup

Delicious, easy and healthy white bean soup. Make it in the crockpot while at work. Serve with salad and bread for easy weeknight meal.

Ingredients

  • 2 tbsp olive oil
  • 1 leek trimmed, washed and sliced thin - white only
  • 2 shallots sliced thin
  • 8 oz crimini mushrooms sliced
  • Leaves from 2-3 rosemary sprigs
  • 1 lb white beans washed and sorted
  • 2-32 oz vegetable broth
  • 2 cups whole peeled baby carrots
  • Salt and pepper

Preparation

Step 1

1. Heat olive oil in a sauté pan. Sauté leeks and shallots until soft - about 5 minutes.

2. Add mushrooms and rosemary. Sauté for another 5 minutes until mushrooms begin to brown.

3. Put sautéed vegetables, carrots, beans, and broth into the crockpot. Cover and leave overnight.

4. In the am, turn the crockpot on low and cook for 8 hours. Salt and pepper to taste.

For quicker cooking, boil beans in water for 5 minutes. Turn off heat and leave in hot water for 1 hour. Drain beans and add sautéed vegetables, carrots, and broth to pot. Bring to a boil then reduce heat and simmer for 1 to 1.5 hours until beans are cooked through and broth is thickened. Salt and pepper to taste.
