Ingredients
- 2 Tbsp. Dijon Mustard
- 1 Tbsp. Extra-Virgin Olive Oil
- 1 Tbsp. Red Wine Vinegar
- 1/4 tsp. Salt
- 1/8 tsp. Freshly Ground Black Pepper
- 1 Flank Steak
- 4 1/4 -in. Thick Slices Red Onion
- Vegetable Oil Cooking Spray
- 16 Fresh Asparagus Spears, trimmed
Preparation
Step 1
Ina sm. bowl, combine first 5 ingredients; stir well with a whisk. Set vinaigrette aside. Spray flank steak & onion slices with cooking spray. With the lid closed, grill the steak & onion over high heat till cooked to desired doneness, 8-10 min. for med-rare, turning once. At the same time, grill the asparagus over med-heat till browned in spots but not charred, 6-8 min, turning occasionally. Let steak rest for 5 min. Cut asparagus into 11/2-in. pieces. Cut steak diagonally across grain into thin slices. In lg. bowl, combine steak, asparagus, & onion slices. Add vinaigrette; toss well. Serve warm.
