  • 1/4 c Red Onions, raw, chopped
  • 3 Garlic cloves, chopped
  • 1/2 t Crushed Red Pepper Flakes
  • 1/2 c Fresh Parsley, chopped
  • 1 T Fresh Oregano, chopped
  • 1/4 c Extra Virgin Olive Oil
  • 2 T Red Wine Vinegar
  • 1/4 t Salt
  • 1/2 t Pepper
  • 1 lb Flank Steak

Preparation

Step 1

In the bowl of a food processor, put the onion, garlic and red pepper flakes. Pulse until finely chopped. Add the parsley and oregano, pulse til coarsely chopped. Add the olive oil, vinegar, salt and pepper.
Put steak in a shallow pan and pour 1/3 cup of the chimichurri sauce over it. Turn to coat. Cover and refrigerate for at least 4 hours or over-night. Cover and refrigerate the remaining sauce.
Heat grill to medium-hot. Grill the steak for 4-5 minutes per side for med rare. Let stand for 5 minutes before slicing. Slice thinly and divide among 4 plates. Top each with 1 generous teaspoon of the chimichurri sauce and serve.
