Rosy Apple Pie

This pie was a favorite of Grammy's. She would make it in the fall when the pippin apples were in season. I make it for my bridge club and they all love it.

Ingredients
- 7 apples, pared and sliced
- 1/4 cup old fashioned red cinnamon candies
- 1 cup sugar
- 1 teaspoon grated lemon rind
- 2 Tablespoons flour
- 2 Tablespoons water

Preparation
Step 1
Make a pie crust (double recipe)
Preheat oven to 425.
In a covered pan, place apples, cinnamon candies, sugar, lemon rind and water. Steam for 5 minutes.
Remove apples and reserve syrup.
Mix flour with 2 tablespoons water, stir into syrup and cook until slightly thick.
Line 9" pie plate with pastry. Fill with apples and pour syrup over apples. Arrange strips of pastry in a lattice style over filling.
Bake until slightly browned, about 30 minutes.
