Ingredients

  • Red Onion

    Peppers – any color

  • Zucchini

  • Garlic cloves

Directions

Chop a red onion, 3 peppers any color and Zucchini put on sheet and sprinkle with salt and pepper and olive oil . Roast 15 minutes at 400. Add 2 chopped garlic cloves and mix around and continue roasting another 15 minutes In separate bowl mix 12 eggs, some milk (or cream of some kind) salt pepper and grated cheese. Maybe 1/2-1 cup of cheese . Wisk together. In a big frying pan melt 1 tsp of butter add chopped scallions about 4 green and white parts. Cook a scallions in butter for a minute. Then add vegetables then add eggs. Cook on stove for a minute until it starts to set. Stick frying pan in oven and cook about 30 minutes. At 350 degrees. When eggs are cooked and not runny in the center grate some gruyere cheese on top and put back into oven until melted about 1 minute. This will serve 6 people. 6 points per serving
