Ingredients
- 1 cup golden raisins
- 1 cup candies lemon peel, chopped
- 8 oz candied pineapple chopped
- 1/2 cup flaked coconut
- 1 3/4 cups all-purpose flour, divided
- 1/2 cup butter or margarine, divided
- 1 cup granulated sugar
- 3 eggs
- 1/2 cup orange juice1 tsp baking powder
- 1/2 tsp lemon extract
- 1/4 tsp salt

Step 1
preheat oven to 325. grease and flour 9 x 5 loaf pan. in large bowl combine raisins, candied lemon peel, candied pineapple, coconut and 1/4 cup flour. inlarge bowl with electric mixer at high, beat together butter and sugar until light,, about 2 minutes. with mixer at medium, beat in eggs, orange juice, remaining flour,, baking powder, lemon extract and salt until blended. stir in reserved fruit mixture. spread batter evenly into pan.
bake 2 hours or until golden.
