miniature fruitcakes

Ingredients

  • 1 pkg (11oz) mixed dried fruit, coarsely chopped
  • 1/4 cup dried cranberries
  • 1/4 cup pecans, coarsely chopped
  • 1/2 cup dark rum or apple juice
  • 1/2 cup all-purpose flour
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/8 tsp baking soda
  • 1/2 cup butter or margarine
  • 1/4 cup firmly packed dark brown sugar
  • 1 egg
  • 1/4 cup unsulphured molasses

Preparation

Step 1

preheat oven to 325. grease and flour 6 mini bundt pan cups. in medium bowl, stir together first 4 ingredients, set aside. in another medium bowl, stir together flour, cinnamon, salt and baking soda. in large blw with electric mixer at high, beat together butter and sugar until light, about 3 minutes. add egg and beat until blended.

with mixer at low, alternately add the flour mixture and molasses until combines. stir in reserved fruit-rum mixture. spoon batter into prepared cups.

bake 35-40 minutes until cakes begin to pull away from the sides of the pan.
