Peg Swingle's Snickerdoodle Cookies

Ingredients

  • Topping:
  • 1/2 C. butter or margarine
  • 1/2 C. shortnening (Peg uses Crisco)
  • 1 1/2 C. sugar
  • 2 eggs
  • 1 t. vanilla
  • 2 2/3 C. flour
  • 2 t. cream of tarter
  • 1 t. baking soda
  • 1/4 t. salt
  • 2 T. sugar
  • 1 t. cinnamon

Preparation

Step 1

Preheat oven to 400 degrees.

Cream butter, shortening, sugar, eggs and vanilla with mixer.

Combine flour, cream of tarter, baking soda and salt in separate bowl.

Incorporate dry ingredients into butter mixture. In small dish, mix the 2 T. sugar and 1 t. cinnamon and set aside.

Roll cookie dough into balls and roll each ball lightly in the sugar/cinnamon mixture. Place about 2" apart on ungreased cookie sheet. (These will spread.) Bake at 400 degrees for 8-10 minutes, depending upon how chewy you want your cookies to be. (Peg bakes hers for 8 minutes.) Remove cookies from baking sheet promptly and cool on wire racks.

Makes 56 cookies.
