Beef Taco Salad

Ingredients

  • 1 pound ground beef
  • 1 tbsp vegetable oil
  • 1/2 cup yellow onion, chopped
  • 2 tbsp garlic
  • 1/4 tsp cumin
  • 1/8 tsp red pepper
  • 1 head red leaf lettuce
  • 1 head romaine lettuce
  • 1 red onion, thinly sliced
  • 8 cherry tomatoes, quartered
  • 1 cup crumbled tortilla chips
  • 1 cup shredded cheddar cheese
  • 1/2 cup chunky salsa
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil

Preparation

Step 1

Cook beef, drain. Wipe grease from skillet.

Heat oil, add onion, garlic, cumin and red pepper Cook until onion is tender. Stir in beef. Cook 5 minutes.

Rinse lettuce and pat dry. Tear into bite size pieces. Top with beef mix. Sprinkle with red onion, tomatoes, chips and cheddar cheese. Top salad with 2 tablespoons of salsa.

Mix lime juice and olive oil. Drizzle over salads and serve.
