Chili Lime Chicken

Ingredients

  • Two chicken tenderloins; cut into pieces
  • Chili powder
  • 1 Lime
  • Chili Lime Cholulu sauce
  • Soft tortillas
  • Black beans or Fat free Refried beans
  • Rice, optional
  • Canned whole kernel corn, optional
  • Chopped tomatoes
  • Finely chopped onion
  • Fat free or low fat Sour Cream

Preparation

Step 1

Season chicken to taste with salt and onion powder
Put 1Tbsp oil in skillet, add Chicken
Sprinkle heavily with Chili powder on both sides
Begin to cook on medium to medium low heat for about 2 to 3 minutes
Turn; add Cholulu sauce to taste; squeeze half a lime and cook another
2 to 3 minutes until done but tender and still juicy. Do Not overlook
Turn heat to LOW just to keep warm.
Using wooden spatula or spoon, 'chop' into bite size pieces. You can shred with 2 forks if you prefer.
Place 10 inch Tortilla on. Piece of foil large enough to loosely wrap Tortilla
Squeeze a few drops of lime juice onto Tortilla, fold foil over top and place in 250 degree oven just long enough to heat; 2 to 3 minutes.
Heat refried beans if using.
Stir cooked rice into chicken, if you are using rice
Put chicken and beans on Tortilla, top with Mexican shredded cheese, put back in oven until cheese is melted.
Top with ingredients of your choice; chopped tomatoes, onions,
whole kernel corn, sour cream, etc, Roll into Burrito and enjoy.

Makes Two 10 inch Burritos
If you want to eliminate the bread, serve chicken on top of torn lettuce and top with your favorite ingredients or without lettuce and toppings on the side.


You can also use shredded or ground beef. You can also season beef or chicken as above (adjust quantities as needed), put in casserole dish, stir in tortilla chips pieces or Fritos, top with cheese of your choice and heat in oven until cheese is melted. Top with Fat free or low fat sour cream.
