Ingredients
- 4 Tablespoons butter
- 1/3 cup flour
- 1-1/2 cups brown sugar
- 1/8 teaspoon salt
- 1-1/2 cups milk
- 2 egg yolks, beaten
- 1/4 teaspoon vanilla
- 2 egg whites
- 3 Tablespoons sugar
Preparation
Step 1
Combine butter, flour, salt, and sugar together in a saucepan. Stir over heat until blended together and slightly caramelized. Add milk and cook in a double boiler until thick.
Pour some of the hot mixture on beaten egg yolks. Return to double boiler and cook 2 minutes longer. Add vanilla. Pour into baked pie shell.
Cover the pie with a meringue made from 2 egg whites and 3 Tablespoons sugar.
Brown at 300 degrees for 15 minutes.
Whipped cream may be used in place of meringue and then sprinkled with chopped pecans.
