Ingredients

  • 1 pound butter
  • 3 cups sugar
  • 8 eggs, separated
  • 3 cups sifted flour
  • 1/3 cup light rum
  • 1/2 cup chopped pecans

Preparation

Step 1

cream butter with 2 cups sugar until fluffy. add egg yolks one at a time, beating thoroughly after each addition. add flour alternately with rum in thirds, beating well after each addition.

beat egg whites until they are stiff but not dry, adding remaining sugar gradually.

fold yolk mixture into egg whites. butter a 10-inch tube pan and sprinkle pecans over the bottom. add batter carefully. bake in 350 oven for 1 1/2 hours or until cake is done.
