bread-cranberry poppy seed

Ingredients

  • 2 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 tablespoons poppy seed
  • 1 tablespoon baking powder
  • 1 cup skim milk
  • 1/3 cup margarine, melted
  • 1/4 cup egg beaters egg product
  • 1 tsp vanilla extract
  • 2 tsp grated lemon peel
  • 1 cup fresh or frozen cranberries, chopped
  • confectioners sugar glaze

Preparation

Step 1

grease bottom of 8 x 4 x 2 inch loaf pan, set aside.

in large bowl, mix flour, sugar, poppy seed and baking powder, set aside. blend milk, margarine, egg product, vanilla and lemon peel, stir into flour mixture just until moistened. stir in cranberries, spread in prepared pan.

bake at 350 for 60-70 minutes. cool, drizzle with glaze if desired.
