  • 4 lbs. or larger, at room temperature.

Step 1

Put the roast in a roasting pan, fat side up, and place it , uncovered, in a preheated 375 degree oven for 1 1/4 hours. Turn off the oven and let the roast stand for 5 hours in the oven. Do not open the oven door Forty-five minutes before you want to serve the prime rib, add salt and pepper to the roast, and turn on oven to 300 degrees.
