Ingredients
- CRUST: 3 pies:
- 1 1/2 cups oleo
- 3/4 cup brown sugar
- 3 cups flour
- 1 1/2 cups nuts & coconut
- Filling - 3 pies:
- 1/2 gallon vanilla ice cream - softened
- 3/4 cup solid pumpkin
- pumpkin pie spice
- 1/4 cup sugar
Preparation
Step 1
Mix crust ingredients together and spread on cookie sheet. Bake 15 minutes at 400 degrees, stir and turn over often to brown.
Once toasted press into pie shells, keep 1/2 cup to the side.
Soften ice cream. Mix pumpkin and pumpkin pie spice until brown in color. Add in sugar and beat with mixer. Then add in softened ice cream and beat well. Pour in pie shells and sprinkle with remaining crust on top. Place in freezer to set. Cover and store.
