Ingredients
- 1/2 lb. green beans, cut into 1/2-inch pieces
- 2 Tbs. extra-virgin olive oil
- 2 Tbs. red wine vinegar
- 1/4 cup minced red onion
- 1 Tbs. country dijon mustard
- 1/4 tsp. sugar
- 1/4 tsp. salt
- 1 cup frozen edamame (soybeans), thawed
- 1 15 oz. can no-salt-added kidney beans, drained and rinsed
Preparation
Step 1
• Steam the green beans until tender, about 5 minutes, or microwave with 2 Tblsp water for about 1-3/4 minutes. Rinse under cold water and drain well.
• In a large bowl, whisk together the olive oil, vinegar, onion, mustard, sugar, and salt.
• Mix in the green beans, edamame, and kidney beans.
