foolproof vanilla cake

Ingredients

  • vegetable oil spray
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 3 large eggs
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cream of tartar
  • 1 1/3 cups buttermilk
  • 1 tablespoon vanilla extract

Step 1

preheat oven to 350

spray baking pans with oil, set aside

in a medium bowl, cream butter and sugar until light and fluffy. add eggs one at a time, beating well after each addition.

in a large mixing bowl, combine the flour, baking powder, and cream of tartar. in a small bowl, combine buttermilk and vanilla; add to the butter mixture and combine. add butter mixture to the dry ingredients one third at a time, scraping the bowl frequently.

bake until a toothpick inserted in the center comes out clear. cool, then frost.
