Ingredients
- 2 cups sifted flour (freshly ground whole wheat)
- 1 tsp salt
- 1 T baking powder
- 1/3 cup chilled vegetable shortening
- 3/4 cup milk
- Milk, melted butter (optional glaze)
- grated cheddar cheese
- freshly grated pepper
Preparation
Step 1
Preheat oven to 450. Sift flour with salt and baking powder into a bowl and cut in shortening with a pastry blender until the texture of very coarse meal. Add cheese and pepper.
Make a well in the center, pour in milk, and stir with a fork until dough holds together. Knead gently on a lightly floured surface 7 or 8 times. Roll 1/2 inch thick and cut in rounds with a floured cutter.
Place on ungreased baking sheets (1" apart for crust-sided biscuits, almost touching for soft.) For glistening brown tops, brush with glaze.
Bake 12-15 minutes until lightly browned. Serve oven hot with butter.
