FISH****Smoked Salmon or Whitefish Caesar Salad

29/03/14 - Great for both. A really nice change from a chicken Caesar salad and the dressing went perfectly with it.
17/07/15 - Update - I replaced the smoked salmon with some Cajun smoked Whitefish from Tarini's - best yet! The texture of the fish stands up so much better than the thin slices of smoked salmon. This is the way to go if you're making this salad. Regular smoked whitefish works as well, although the cajun was a nice touch if its available.

Ingredients
- 1/2 lemon, juiced and zested
- 2 anchovies
- 1 dash Worcestershire sauce
- 1/4 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1 ounce light cream cheese, room temperature
- 1 1/2 tbsp. olive oil
- Sprinkled sea salt and freshly ground black pepper, to taste
- For the salad
- 1 small head romaine lettuce, sliced
- 1 handful fresh dill, chopped
- 2 green onions, chopped
- 2 tbsp. capers
- Shavings of parmesan cheese for garnish
- 1/2 cup rye bread croutons
- 1 small pkg. Costo smoked salmon slices cut into broad ribbons
Preparation
Step 1
*Puree* the dressing ingredients in the mini food processor until smooth and refrigerate until serving time.
*Combine* the lettuce, dill, green onions and capers in a large salad bowl. *Drizzle* with dressing and toss well. *Add* croutons and toss again. *Divide* between two plates and top with cheese shavings and smoked salmon.
