Ingredients
- 4 boneless skinless chicken breasts, cubed
- 2 tsp. oil
- 1 can broccoli cheese soup
- 1 can chicken broth
- 3/4 cup water
- 1/2 tsp dried thyme leaves
- 1/4 tsp. black pepper
- 1 1/2 cups minute rice
- 2 cups fresh broccoli florets
- 1 red pepper, cut into strips
Preparation
Step 1
In a large frypan, brown chicken in hot oil. In large bowl, combine broccoli cheese soup, chicken broth, water, thyme and pepper. Add to chicken and bring to boil. Stir in rice. Cover; simmer 5 minutes. Add broccoli and red pepper and continue simmering, 5 minutes or until vegetables are tender crisp.
