Ingredients
- 2 Tbs finely chopped white onions
- 1 Tbs minced fresh jalapeño or serrano chile including seeds, or more to taste
- 1 Tsp kosher salt or1/2 Tsp fine salt
- 1/4 cup chopped cilantro divided
- 1 Tbs freshly squeezed lime juice or more to taste
- 1 large or 2 small ripe avocados
- 1/4 cup coarsely chopped smoked almonds divided
- 3 Tbs crumbled blue cheese divided
Preparation
Step 1
Mash the onion, chile, salt and half of the cilantro into a paste in a molcajete or mortar.
Stir in the lime juice
Add the avocados
Add the remaining cilantro and most of the almonds and blue cheese. Toss well and coarsely mash. Season to taste with additional salt and lime juice
Garnish with remaining almonds and blue cheese
