Ingredients

  • 1/2

    medium head red cabbage

  • 1

    cup white vinegar

  • 1

    cup white sugar

  • 1

    teaspoon coarse salt

  • 1 1/2

    cups water

  • 2

    small bay leaves

  • 1/4

    teaspoon ground cloves

Directions

Rinse and core cabbage. Cut in half. Save other half for later or use in a green salad. Using a chef’s knife, cut as thin as possible and then chop as desired. Place the chopped cabbage in a large saucepan. Stir in the vinegar, sugar, salt, water, bay leaves and ground cloves. Bring to a boil, turn heat down, cover with lid and simmer for 2 hours until most of the liquid is gone. Serve immediately alongside the Danish Frikadeller. Serve with: Solvang Danish Frikadeller Variation: Double or triple the recipe.
